I was born in Bever, a quiet corner of Belgium where fields stretch wide and life moves gently. Surrounded by nature and the steady rhythm of making things by hand, I learned early on to value patience, craft, and attention. My childhood unfolded between the outdoors and a small arts and crafts center, where creativity lived in every detail and where I first understood what it means to truly feel what you create. Bread was always there too—simple loaves, baked at home, familiar and comforting—but sourdough remained a distant mystery for many years.
It was the north that changed everything. Drawn by a longing for a life closer to the land, I found my way to Norway, where I worked on farms, lived with few comforts, and learned to follow the seasons. There, in the stillness of the mountains and the raw beauty of the landscape, I finally began to understand sourdough—not as a recipe, but as something alive. What started with hesitation grew into fascination, and then into a daily ritual rooted in time, care, and instinct.
In 2022, I opened my bakery in a small mountain village, where the wilderness is never far away. Here, everything comes together: the quiet influence of my beginnings, the rugged spirit of the north, and a deep respect for honest ingredients and slow processes. My bread is shaped by this place—by the cold air, the long days, and the belief that good things take time. And that is what I continue to share, one loaf at a time.
